There's hardly a tasting in Burgundy that doesn't include a map of the appellations. It's an essential tool for wine lovers who want to understand Burgundy's terroir, and for wine professionals who want to explain it. These maps structure our vision of Burgundy wine. But has it always been this way? Who first had the idea of projecting a three-dimensional vineyard landscape onto a two-dimensional sheet of paper to represent wine in this way? Since when have there been geological studies of vineyards? And what influence have they had on viticultural cartography? Three speakers will take you into the world of Burgundy wine cartography, which is as aesthetic as it is varied and colourful. At this conference, which brings together archivist Mathias Compagnon, historian Karoline Knoth and geologist Françoise Vannier, you will have the pleasure of discovering the first wine map representing the hierarchies of Burgundy's crus. Spoiler: it's not Burgundian. And for the first time, you'll have the chance to see the first version of the famous 1860 wine map, which has just been found and restored.
